Ingredients for 2 servings

  • 2 Beef New York Strip steaks
  • 1 cup Kefir Lab’s Plain Kefir
  • 1 lb carrots, peeled and cut into sticks
  • 2 tbsp olive oil
  • 1 tsp cumin seeds
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 clove garlic, minced
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill
  • 1 tbsp honey
  • 1 tsp Dijon mustard

How to make it

Prepare the Carrots:

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the carrots with olive oil, cumin seeds, smoked paprika, salt, and pepper until evenly coated.
  3. Spread the carrots on a baking sheet in a single layer.
  4. Roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.

Prepare the Steaks:

  1. While the carrots are roasting, season the Beef New York Strip steaks with salt and pepper on both sides.
  2. Heat a skillet or grill pan over medium-high heat and add a bit of olive oil.
  3. Cook the steaks for about 4-5 minutes on each side for medium-rare, or to your desired doneness.
  4. Remove the steaks from the pan and let them rest for a few minutes before slicing.

Prepare the Kefir Sauce:

  1. In a small bowl, combine Kefirlab’s plain Kefir, minced garlic, lemon juice, chopped parsley, chopped dill, honey, and Dijon mustard. Mix well until smooth and creamy.
  2. Season with salt and pepper to taste.

Serve:

  1. Slice the rested steaks into thin strips.
  2. Arrange the roasted carrots on a serving platter and top with sliced steak.
  3. Drizzle the Kefir sauce over the steak and carrots.
  4. Garnish with additional chopped parsley and dill, if desired.
