- 2 Beef New York Strip steaks
- 1 cup Kefir Lab’s Plain Kefir
- 1 lb carrots, peeled and cut into sticks
- 2 tbsp olive oil
- 1 tsp cumin seeds
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 clove garlic, minced
- 1 tbsp fresh lemon juice
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh dill
- 1 tbsp honey
- 1 tsp Dijon mustard
How to make it
Prepare the Carrots:
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the carrots with olive oil, cumin seeds, smoked paprika, salt, and pepper until evenly coated.
- Spread the carrots on a baking sheet in a single layer.
- Roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
Prepare the Steaks:
- While the carrots are roasting, season the Beef New York Strip steaks with salt and pepper on both sides.
- Heat a skillet or grill pan over medium-high heat and add a bit of olive oil.
- Cook the steaks for about 4-5 minutes on each side for medium-rare, or to your desired doneness.
- Remove the steaks from the pan and let them rest for a few minutes before slicing.
Prepare the Kefir Sauce:
- In a small bowl, combine Kefirlab’s plain Kefir, minced garlic, lemon juice, chopped parsley, chopped dill, honey, and Dijon mustard. Mix well until smooth and creamy.
